Cacao Nib Granola Bars


  • 2 cups rolled oats
  • 1/2 cup honey
  • 1/2 cup creamy peanut butter
  • 1/2 cup chopped nuts (almonds, pecans, or walnuts work well)
  • 1/4 cup Rigello cacao nibs
  • 1 tsp vanilla extract
  • Pinch of salt


  1. Preheat your oven to 350°F (180°C) and line a 9-inch square baking dish with parchment paper.
  2. In a large bowl, combine the rolled oats, chopped nuts, and cocoa nibs.
  3. In a small saucepan, heat the honey and peanut butter over medium heat until melted and smooth.
  4. Remove the saucepan from the heat and stir in the vanilla extract and salt.
  5. Pour the honey and peanut butter mixture over the dry ingredients and stir until well combined.
  6. Transfer the mixture to the prepared baking dish and press down firmly to create an even layer.
  7. Bake for 18-20 minutes, or until the edges are golden brown.
  8. Remove from the oven and let the granola bars cool in the pan for 10-15 minutes.
  9. Once the granola bars are cool enough to handle, remove them from the pan and cut them into squares or rectangles.
  10. Store the granola bars in an airtight container at room temperature for up to a week.
