Dark Chocolate Cacao Truffles


  • 1 cup dark chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup Rigello cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional toppings: chopped nuts, cocoa powder, powdered sugar, coconut flakes, or sea salt


  1. In a heatproof bowl, add the dark chocolate chips and set aside.
  2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.
  3. Pour the heated cream over the chocolate chips and let it sit for 1-2 minutes.
  4. Add the cocoa powder, vanilla extract, and salt to the chocolate mixture and stir until smooth and well combined.
  5. Cover the bowl with plastic wrap and chill in the refrigerator for 1-2 hours, or until firm.
  6. Once the mixture is firm, use a small cookie scoop or spoon to scoop out small portions of the mixture.
  7. Roll each portion into a ball and then roll in your desired toppings (chopped nuts, cocoa powder, powdered sugar, coconut flakes, or sea salt).
  8. Store the truffles in an airtight container in the refrigerator for up to a week.
